3 Hearty Seafood Recipes For The Crock Pot

Crock Pot Crab and Spinach Lasagna

What you need:

  • 1 package dried lasagna noodles
  • 1 bunch fresh spinach, chopped
  • 15 fresh mushrooms, sliced
  • 2 cups Alfredo sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1 1/2 cups ricotta cheese
  • 1 1/2 cups cottage cheese
  • 1 cup imitation crabmeat

Pour 1 cup Alfredo sauce in a slow cooker then top with a layer of lasagna noodles. Spread some spinach, mushrooms, crabmeat, half of the ricotta cheese and half of the cottage cheese on top of the noodles. Repeat the layers with the remaining ingredients. You should end with a layer of lasagna noodles followed by the remaining Alfredo sauce. Cover and cook for 2 hours and 15 minutes on high. When ready, sprinkle mozzarella cheese over lasagna and cook for 30 minutes more.

Slow Cooked Creamy Fish Chowder

What you need:

  • 1 can evaporated milk
  • 1/4 kilogram halibut, sliced into bite-size pieces
  • 4 slices bacon, chopped
  • 2 large carrots, diced
  • 2 large potatoes, diced
  • 3 stalks celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken stock
  • 1 cup shrimp, peeled and deveined
  • 1 cup scallops
  • 1 cup fresh corn kernels
  • 1/2 teaspoon red pepper flakes
  • Ground black pepper to taste

In a pan, cook bacon for 6 to 8 minutes or until browned. Stir in onion and garlic and cook until tender. Transfer bacon mixture into a crock pot. Add chicken stock, carrots, potatoes, celery and corn. Cover and cook for 3 hours on high. Add shrimp, scallops and halibut to the pot and cook for 1 hour more. When ready, stir in evaporated milk and heat through before serving.

Crock Pot Tuna and Beans

What you need:

  • 1 kilogram white beans, soaked overnight and drained
  • 2 cans white tuna in water, drained and flaked
  • 1 clove garlic, crushed
  • 2 sprigs basil, finely chopped
  • 6 cups water
  • 2 cups chopped tomatoes
  • 4 tablespoons olive oil
  • Salt and ground black pepper to taste

Heat olive oil in a skillet and cook garlic for 1 minute. Discard garlic then place beans in the oil, stirring to coat. Transfer to a slow cooker. Add the water, cover and cook for 1 hour on high. Reduce heat to low and cook for 4 to 6 hours more. Add the tuna, basil and tomatoes then season with salt and pepper.
